Pumpkin Chocolate Chip Loaf

For all you banana bread lovers out there, it’s time to spice things up a bit and try out this Pumpkin Chocolate Chip Loaf. The recipe is easy and your kitchen will smell delightful throughout the baking process.

This loaf goes perfectly with a book, blanket, fire and a cup of coffee. It can be eaten warm or at room temperature and is so yummy with a buttery spread.

I first tried this loaf last fall when one of my girlfriends and I went pumpkin crazy and made this loaf and a pumpkin cheesecake. This loaf is so good, I knew I had to make it again.

Alright enough foreplay, here’s the recipe:

You’ll Need:

  • 1 1/2 cups of Pumpkin Puree
  • 2 Eggs (for my vegans, try 1/2 cup of applesauce to substitute the eggs)
  • 3 cups of Chocolate Chips (for all my vegans/dairy-free people, try the Enjoy Life Semi-Sweet Chips)
  • 4 tsp of Ground Cloves
  • 4 tsp of Ground Nutmeg
  • 1 3/4 cups of Flour
  • 1 tsp of Baking Soda
  • 3/4 tsp of Salt
  • 1/2 cup of Brown Sugar, lightly packed
  • 2 tsp of Cinnamon
  • 3/4 cup of Granulated Sugar
  • 1/2 cup Coconut Oil (or vegetable oil)
  • 1/4 cup Orange Juice (or milk)

 

DSCN2490Step One: Preheat your oven to 350F and grease & flour a 9×5 loaf pan. You don’t have to do the flouring step, but it helps to keep the bread from sticking to the pan. 

Step Two: Combine the dry ingredients in a large bowl. (Cloves, Nutmeg, Flour, Baking Soda, Salt & Cinnamon). Set Aside.

DSCN2494Step Three: In a medium bowl, mix the eggs (or applesauce), granulated sugar & brown sugar together until combined. Once combined, add in your oil, pumpkin and orange juice (or milk) until thoroughly and completely mixed. 

Step Four: Add your wet ingredients to your dry ingredients and mix. There will be a few lumps and that’s okay, it’s better not to overmix your ingredients. 

Step Five: Fold in the chocolate chips. 

Step Six: Pour your batter into your greased loaf pan and bake for 60 minutes. 

Pro Tip: At the 30-minute mark, loosely cover the bun in the oven with aluminum foil. This will stop the top from overcooking.
